Looking for the health benefits of a delicious, cannabis infused cookie, but don’t want to consume a bunch of sugar and flour? This peanut butter cookie is for you! Coconut sugar replaces refined white sugar and almond flour replaces refined all-purpose flour. All the yumminess, all the chill, without any of the guilt.

Ingredients:

  • 1 c. sugar free all natural peanut butter
  • ½ c. (1 stick) infused butter
  • 1 c. coconut sugar
  • 1 egg (room temp)
  • 2 tsp. vanilla
  • 1 c. almond flour
  • 2 Tbsp. coconut flour
  • 1 tsp. baking powder
  • ½ tsp. salt

Directions:
Preheat oven to 200° (F).    
In large bowl, beat the peanut butter, butter, and coconut sugar. Add in egg and vanilla until combined. In separate bowl, combine the almond flour, coconut flour, baking powder and salt. Mix dry ingredients into wet ingredients, until well combined.
Scoop dough in 1 Tbsp. equal size balls, onto ungreased cookie sheet. Press down with fork to leave lines in the top of the cookie. Bake on low temperature (200°F) for 1 hour.
